Since the time of the ancient Greeks, the “white gold” from the sea water of the Aegean Sea has been a status symbol of wealth and prosperity.
The Fleur de Sel occurs naturally when seawater collects in depressions and small pools on the coast and then begins to evaporate in the warm midday sun. The water leaves behind a layer of snow-white, delicate-looking salt crystals, which are skimmed off by local fishermen using traditional handcraft . The wet salt is then spread on the roofs of the fishermen's houses and dried out further by the sun's rays alone until the coarse salt grains typical of natural sea salt are formed and the villages along the coast shine white in the sunlight, as if after a snowfall.
The result of this millennia-old manufacturing process is Fleur de Sel - a natural sea salt that is second to none and is an integral part of Crete's cuisine. It is particularly popular as a small snack and is often served with olive oil on a warm piece of bread. Simply delicious!
Sea salt with the freshness of Crete lemon
The lemon has a history in Crete and the rest of the Mediterranean that goes back over a thousand years. The lush trees from the groves of Crete are particularly known for their sun-ripened, aromatic citrus fruits. Only fresh and untreated Crete lemons are used for Fleur de Sel and each fruit is peeled individually by hand . The zest is then finely chopped and mixed with the natural sea salt of the Fleur de Sel. The salt takes on the fruity taste of the lemons and at the same time preserves the zest in a completely natural way for a particularly long-lasting aroma without chemical preservatives , flavor enhancers or colorings.
